Banana Upside-Down Cake

Have you heard of the banana horror story? An article from New Scientist had claimed bananas will be extinct in 10 years from 2013 due to various fungi and panama diseases. Blessed we are for we still have bananas around them and the claim was disputed ever since. I love banana and I believe most of you love banana too. Let's all hope that bananas will stay around forever and ever.

Anyways, since we still have plenty of delicious bananas in our kitchens, I thought it would be great to introduce you to "Banana Upside-down Cake" which is our family's all time favorite.





What you need: 

For the Topping

  • 1/4cup butter
  • 1/2cup brown sugar
  • 2 bananas

For the Pound Cake

  • 2/3cup sugar
  • 1/2cup butter at room temp
  • 2 large eggs at room temp
  • 1tsp vanilla extract
  • 1 1/2cup all purpose flour
  • 1tsp baking powder
  • 1tsp baking soda
  • 1tsp salt
  • 1tsp nutmeg
  • 1tsp cinnamon
  • 1/2cup milk at room temp

Steps:

@ Preheat oven to 375 F


1. generously butter(or any type of cooking oil except olive oil) the pan.


2. On a saucepan, melt butter over medium heat. 


3. Once the butter melts, add brown sugar and cook until thick. 


This is the caramel sauce we will be using to sweeten the banana. 


4. Peel and cut banana in half.


5. Pour the caramel sauce evenly into the pan then lay the bananas with the cut/flat surface  facing down.


6. In a seperate bowl, mix the dry ingredients together.

7. Beat soften butter and sugar together until light and fluffy for about 5 minutes.

8. Add eggs one at a time giving each eggs 30 Seconds to mix in well then add vanilla extract.



9. Add the dry ingredients mixture in three additions alternating with milk(two additions) ending with dry ingredients mixture. Each addition should be mixed for no more than 20seconds on medium high speed.

10. Pour batter over caramel and banana.


11. Bake for 40 minutes.


12. When it's done, immediately turn the pan upside down on a cooling rack (have a dish or a paper under the rack to avoid mess!)


13. Once it is cooled, take the pan of and Voila!  


All you have to do now is to cut and serve! It is moist, sweet, and you can enjoy the fragrance of banana.
